Queso Blanco Dip

This cheese is very popular at parties and family get togethers. Adjust peppers as desired based on personal preference and season.

Ingredients

  • 1lb quality white american cheese (Boarshead, Land O Lakes)
  • 1/2 cup water
  • 1/2 cup whole milk
  • 3 to 4 fresh pasilla/pablano chiles
  • 2 to 3 fresh jalapeƱos
  • 5 to 6 fresh serrano chiles
  • 1/2 teaspoon cumin (optional)

Equipment

  • Kitchen knife
  • Large microwave safe bowl
  • Spoon for stirring
  • Measuring cups
  • Sheet pan
  • Foil

Instructions

  • Roast chiles on grill or under broiler
  • Remove blistered skin from chiles
  • Mince roasted chiles
  • Cube cheese into 1/2" blocks
  • Add cheese, water and milk to microwave safe bowl and microwave on high for 5 to 7 minutes stirring every minute
  • Microwave minced chiles for 2 minutes (prevents cold chiles from making the cheese goopy)
  • Add chiles to cheese and stir
  • Add cumin and stir if desired

Hints

  • Instead of a microwave, a crockpot works great as well.
